On the Farm
Fresh Produce...Once again, my son and I were out and about in the orchard today, checking out all that's in season...
Today, we picked some fresh blueberries, raspberries, apricots, plums, sour cherries and tomatoes (which were still green, but looking great!) What a treat to sample all of these wonderful flavors put forth from our earth.
I made a raspberry pie the other day that was quick, easy and delicious. My Mom used to whip it up when we were younger for a nice summertime treat.
Here's the recipe - enjoy!
RASPBERRY PIE:
3 pints raspberries
3 heaping Tbsp. Corn Starch
1 c. sugar
1/2 c. water
1 store-bought (or homemade, if you have time and a recipe) shortbread pie shell
Put 2&1/2 pints washed berries into pie shell. Mash remaining 1/2 pint berries in a small saucepan. Mix cornstarch and sugar together in separate bowl. Add water to mashed berries and then add sugar mixture. Heat to a boil and until thickened. Pour over berries in the pie shell. Refrigerate until set (about 2hrs.)
This recipe is also delightful when using strawberries. (My husband thinks it's even better that way, but that's all a matter of taste, of course...)
